Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, combine garlic, Parmesan, salt, pepper, and herbs.
- Rub the chicken breasts with olive oil, then coat evenly with the Parmesan mixture.
- Arrange chicken on a baking sheet lined with parchment paper.
- In a separate bowl, toss potatoes with olive oil, paprika, salt, and pepper.
- Spread potatoes around the chicken on the baking sheet.
- Bake for 25-30 minutes or until chicken is cooked through and potatoes are crispy.
- Garnish with extra Parmesan and fresh herbs before serving.
Notes
- You can substitute chicken thighs for breasts for more juiciness.
- Adjust seasoning to your taste; adding red pepper flakes for spice is optional.
