Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato wedges with olive oil, minced garlic, paprika, salt, and pepper.
- Arrange wedges in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, flipping halfway, until crispy and golden brown.
- Remove from oven, sprinkle with parmesan cheese and chopped parsley. Serve hot.

- For extra crispiness, broil wedges for an additional 2 minutes.
- You can substitute with vegan parmesan for a dairy-free version.
