- 1 pound ground turkey
- 2 large sweet potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add ground turkey, cook until browned. Season with salt, pepper, paprika, and thyme.
- In a baking dish, toss diced sweet potatoes with remaining olive oil, salt, and pepper. Spread evenly.
- Cook sweet potatoes in the oven for 15 minutes.
- Remove from oven, layer cooked ground turkey over sweet potatoes.
- Return to oven and bake for an additional 20 minutes until sweet potatoes are tender and edges are crispy.
- Garnish with chopped fresh parsley before serving.
Notes
- Feel free to add a sprinkle of shredded cheese before baking for extra flavor.
- You can substitute ground chicken or turkey breast for leaner options.
