- 1 lb shredded cooked chicken
- 4 cups chicken broth
- 1 teaspoon turmeric powder
- 1 teaspoon grated fresh ginger
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup chopped carrots
- 1 cup chopped celery
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add carrots and celery, cook for 5 minutes.
- Stir in turmeric and ginger, cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and add shredded chicken, simmer for 15 minutes.
- Season with salt and pepper, garnish with parsley before serving.
Notes
- For extra flavor, add a squeeze of lemon or a dash of cayenne pepper.
- You can use leftover cooked chicken or poach fresh chicken breasts.
