- 2 large sweet potatoes, sliced
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish.
- Arrange sliced sweet potatoes in the dish and drizzle with a bit of olive oil. Bake for 20 minutes.
- Meanwhile, heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent.
- Add ground turkey, paprika, salt, and pepper. Cook until browned.
- Layer the cooked turkey over the partially baked sweet potatoes.
- Sprinkle shredded cheese on top and return to oven. Bake for an additional 15 minutes until cheese melts and bubbly.
- Garnish with fresh herbs and serve hot.
Notes
- For extra flavor, add diced bell peppers or chopped spinach to the turkey mixture.
- Use sweet potatoes of similar size for even cooking.
