Ingredients

  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 cup corn kernels
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions and shredded cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, then remove and set aside.
  3. In the same pot, sauté onion and garlic until fragrant.
  4. Stir in diced potatoes and cook for 5 minutes.
  5. Pour in beef broth and bring to a boil.
  6. Reduce heat, add cooked beef and corn, simmer for 15 minutes.
  7. Stir in heavy cream, season with salt and pepper.
  8. Cook for another 5 minutes until heated through.
  9. Garnish with green onions and shredded cheese before serving.

Notes

  • You can substitute ground turkey or chicken for beef.
