- 1 lb ground beef
- 2 cups diced potatoes
- 1 cup corn kernels
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions and shredded cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned, then remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Stir in diced potatoes and cook for 5 minutes.
- Pour in beef broth and bring to a boil.
- Reduce heat, add cooked beef and corn, simmer for 15 minutes.
- Stir in heavy cream, season with salt and pepper.
- Cook for another 5 minutes until heated through.
- Garnish with green onions and shredded cheese before serving.
Notes
- You can substitute ground turkey or chicken for beef.
- For a thicker soup, blend a portion of the soup until smooth and stir back in.
