- 2 lbs beef stew meat, cubed
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Sear the beef cubes until browned on all sides, then transfer to the slow cooker.
- Add chopped onions and garlic to the skillet, cook until translucent, then add to the slow cooker.
- Pour beef broth into the slow cooker, then add carrots, potatoes, tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 7-8 hours or until meat and vegetables are tender.
- Serve hot garnished with fresh herbs.

- You can add other vegetables like celery or peas for variation.
