- 2 pounds beef chuck roast
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 hoagie buns
- 8 slices provolone cheese
Instructions
- Place beef chuck roast in the slow cooker. Add sliced onions, garlic, beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Cook on low for 8 hours until beef is tender and easily shredded.
- Remove beef and shred with two forks. Strain cooking juices and skim excess fat.
- Psalsh beef back into the juices to keep moist.
- Split hoagie buns and toast lightly. Layer shredded beef and cheese on buns, then broil until cheese melts.
- Serve sandwiches hot with a bowl of warm beef au jus for dipping.
