- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sauté until fragrant.
- Add ground turkey, paprika, cumin, salt, and pepper. Cook until browned and cooked through.
- Meanwhile, toss diced sweet potatoes with remaining olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- Layer roasted sweet potatoes and cooked ground turkey mixture in the baking dish. Sprinkle with shredded cheese on top.
- Bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
