- 2 pounds beef sirloin or tenderloin, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the beef pieces with salt, pepper, paprika, and thyme.
- Heat olive oil in a skillet over medium-high heat and quickly sear beef until browned on all sides. Transfer to slow cooker.
- In the same skillet, melt butter and add minced garlic, cooking until fragrant. Pour over the beef in the slow cooker.
- Cook on low for 6-8 hours until beef is tender and flavors melded.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of beef broth or red wine during cooking.
- Serve with steamed vegetables or over cauliflower rice for a complete meal.
