Instructions
- Brown the ground beef in a skillet over medium heat until cooked through. Drain excess fat.
- Layer sliced potatoes in the slow cooker, overlapping slightly.
- Add chopped onion, garlic, salt, pepper, and thyme over the potatoes.
- Spread cooked ground beef evenly over the potato layer.
- Pour beef broth over the ingredients.
- Cover and cook on low for 6-8 hours until potatoes are tender.
- Sprinkle cheese over the top during the last 30 minutes of cooking. Let melt.
- Garnish with fresh parsley before serving.
