Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
- Stir in minced garlic and cook for another minute.
- Add crushed tomatoes, vegetable broth, dried basil, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes to blend flavors.
- Add tortellini and cook according to package instructions until tender.
- Serve hot garnished with fresh basil and grated Parmesan cheese.

- For a vegan option, skip the cheese garnish or use vegan cheese.
