- 1 cup sour cream
- 3 large eggs
- ½ cup butterscotch chips

Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan to form the crust.
- Beat cream cheese and brown sugar until smooth. Add sour cream, vanilla, and eggs one at a time, mixing well.
- Fold in butterscotch chips. Pour filling over the crust and smooth the top.
- Bake for 55-60 minutes until the center is just set. Cool completely, then refrigerate for at least 4 hours.
- Before serving, top with butterscotch sauce, cookie crumbs, whipped cream, and chocolate shavings. Slice and enjoy!
