  • 8 oz (225g) shredded provolone or cheddar cheese
  • 1 ½ cups almond flour or coconut flour (for the low-carb dough)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Combine almond flour, baking powder, onion powder, garlic powder, salt, and pepper in a bowl. Beat the eggs and mix into the dry ingredients to form a dough. Roll out the dough between two sheets of parchment paper into a rectangle about ¼ inch thick.
  2. Heat a tablespoon of olive oil in a skillet. Add sliced onions, bell peppers, and minced garlic. Sauté until softened. Add the sliced beef, seasoning with salt and pepper, and cook until browned. Remove from heat and set aside.
  3. Spread the cooked beef and vegetable mixture evenly over the dough rectangle. Sprinkle shredded cheese over the filling. Carefully roll the dough and filling tightly into a log, then cut into individual slices about 1 to 1.5 inches thick.
  4. Place the slices on a baking sheet lined with parchment paper. Bake at 375°F (190°C) for 20-25 minutes or until golden brown and the cheese is bubbly.
