Lemon Blueberry Yogurt Loaf: A delightful and healthy lemon dessert that combines the vibrant tang of fresh lemons with the sweet burst of blueberries, perfect for breakfast, brunch, or a light snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup plain Greek yogurt
  • 3 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk the eggs, Greek yogurt, vegetable oil, lemon juice, and lemon zest until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  7. Allow the loaf to cool for 10 minutes before transferring it to a wire rack to cool completely.

  • Store wrapped tightly at room temperature for up to 2 days or refrigerate for up to a week.
  • Freeze slices for up to 3 months, thaw at room temperature or warm in the microwave.
  • For added texture, nuts can be included!
