Instructions
- Prepare your mashed potatoes using a creamy recipe.
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, scallions, garlic powder, salt, and pepper.
- Shape mixture into small puffs and place on a lined tray.
- Dip each puff in flour, then beaten egg, and finally coat with panko breadcrumbs.
- Heat oil in a skillet and fry the puffs in batches for 3-4 minutes until golden.
- Drain on paper towels.
