- 8 oz spiral pasta
- 2 cups cooked chicken, shredded or diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 cup black olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, then drain and rinse with cold water.
- In a large bowl, combine cooked pasta, chicken, cherry tomatoes, cucumber, olives, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with chopped parsley and serve chilled or at room temperature.
Notes
- You can substitute grilled chicken for cooked and shredded chicken for extra flavor.
- Add sliced red onions or bell peppers for additional crunch and color.
