- 200g digestive biscuits (or graham crackers)
- 100g unsalted butter, melted
- 250g cream cheese, softened
- 150ml heavy cream
- 100g powdered sugar
- 1 teaspoon vanilla extract
- 150g salted caramel sauce
- 200g fresh blackberries
- 5 ripe figs, sliced
- Extra salted caramel for drizzling
Instructions
- Crush the cookies into fine crumbs using a food processor or rolling pin.
- Mix the cookie crumbs with melted unsalted butter until evenly coated.
- Press the mixture firmly into the bottom of a tart pan to form the crust and chill for 30 minutes.
- Beat cream cheese with powdered sugar and vanilla extract until smooth.
- Whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture and spread over the crust.
- Spread a layer of salted caramel sauce over the filling and arrange blackberries and figs on top.
- Drizzle extra salted caramel over the fruit for added indulgence.
