- 12 no-boil lasagna noodles (or regular lasagna noodles, pre-cooked)
- 2 cups fresh spinach, chopped
- 1 pound (450g) fresh mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce (homemade or store-bought)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a skillet and sauté mushrooms and onions until golden brown.
- Add minced garlic and season with salt and pepper, then remove from heat.
- Lightly sauté chopped spinach and mix with ricotta cheese.
- In a baking dish, spread marinara sauce, layer noodles, mushroom-onion mixture, ricotta-spinach mix, and mozzarella cheese.
- Repeat layers and finish with noodles topped with sauce, mozzarella, and Parmesan cheese.
- Bake at 375°F (190°C) covered with foil for 25 minutes, then uncover and bake for an additional 10-15 minutes until bubbly.
- Let rest before slicing.
