  • 1 pound (450g) fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce (homemade or store-bought)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a skillet and sauté mushrooms and onions until golden brown.
  2. Add minced garlic and season with salt and pepper, then remove from heat.
  3. Lightly sauté chopped spinach and mix with ricotta cheese.
