Ingredients

  • 1 lb boneless skinless chicken breasts, sliced
  • 3 bell peppers (red, green, yellow), sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a small bowl, mix chili powder, cumin, paprika, garlic powder, salt, and pepper.
  3. In a large bowl, toss chicken slices and sliced peppers and onions with olive oil and spice mixture until evenly coated.
