Instructions
- Begin by cooking your eggs to your preferred style—scrambled or fried. While those are cooking, prepare the bacon or turkey bacon by crisping it in a skillet. Slice the avocado and wash your greens thoroughly.
- Lay your tortilla flat on a clean surface. Start by placing a slice of cheese in the center, followed by greens, eggs, bacon, and avocado slices. Season with salt and pepper as needed. If you like spicy flavors, add some hot sauce or a dollop of aioli.
- Fold the sides of the tortilla inward, then tightly roll from the bottom up to enclose all ingredients. For extra crunch, light toasting in a skillet works well.
