- 1 lb smoked sausage, sliced
- 1 cup long-grain rice
- 1 can black beans, drained and rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Stir in diced onion and minced garlic; cook until fragrant, about 2 minutes.
- Add rice and cook, stirring, for 1 minute.
- Pour in chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Stir in black beans, season with salt and pepper, and cook for another 5 minutes.
- Garnish with chopped parsley and serve hot.

- You can substitute turkey sausage for a healthier option.
- Add a pinch of cayenne for extra spice.
