- 1 pound smoked sausage, sliced
- 1 cup black beans, cooked or canned
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same skillet, sauté diced onion and garlic until fragrant and translucent.
- Add rice, cumin, paprika, salt, and pepper. Cook stirring for 2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Stir in black beans and cooked sausage. Cover and cook for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a spicier version, add cayenne pepper or hot sauce.
- This dish pairs well with a side salad or steamed vegetables.
