Ingredients

- 2 tablespoons Cajun seasoning
- 4 chicken breasts, sliced
- 1 cup orzo pasta
- 2 cups chicken broth
- 2 tablespoons olive oil
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1/2 cup chopped parsley
- Salt and pepper to taste
Instructions
- Season chicken slices with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and chopped peppers until tender.
- Add orzo pasta to the skillet, stirring to coat in spices and oil.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes until orzo is tender and liquid absorbed.
- Return chicken to the skillet, stir, and cook for another 2-3 minutes.
- Garnish with chopped parsley and serve hot.
Notes
- Adjust Cajun spice level to taste by adding more or less seasoning.
- For extra flavor, sprinkle with grated Parmesan cheese before serving.
