- 1 pound sliced beef or chicken
- 3 bell peppers, sliced (red, yellow, green)
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lime
Instructions
- In a skillet, heat olive oil over medium heat and sauté sliced meat until browned. Transfer to crockpot.
- Add sliced peppers, onions, garlic, chili powder, cumin, paprika, salt, and pepper to the crockpot.
- Pour lime juice over the mixture and stir to combine.
- Cover and cook on low for 4-6 hours until vegetables are tender and meat is cooked through.
- Serve warm with tortillas and your favorite toppings.
