- 1 lb chicken breast, sliced into strips
- 1/2 cup mayonnaise
- 2 tbsp chili sauce
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tsp sriracha (adjust to taste)
- 2 cups cooked rice
- 1 cup shredded carrots
- 1 cup cucumber, sliced
- 2 green onions, chopped
- Sesame seeds and cilantro for garnish
Instructions
- Preheat grill or oven to 400°F (200°C).
- Mix mayonnaise, chili sauce, honey, soy sauce, and sriracha to make the spicy sauce.
- Grill or bake chicken strips until cooked through and crispy, about 10-12 minutes.
- In a bowl, toss the chicken with half of the spicy sauce.
- Assemble bowls by placing cooked rice at the base.
- Add the sauced chicken on top, followed by carrots and cucumbers.
- Drizzle remaining sauce, garnish with green onions, sesame seeds, and cilantro.
- Serve immediately and enjoy.
