Ingredients
Scale
- 1 cup dark chocolate chips or chopped dark chocolate
- 3 large eggs
- ½ cup coconut sugar or honey
- ÂĽ cup coconut oil or butter, melted
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 2 tablespoons unsweetened cocoa powder
- Optional toppings: fresh berries, coconut flakes, or nuts
Instructions
- Start by melting the dark chocolate chips in a heatproof bowl over simmering water or microwave in short bursts. Stir until smooth and cool slightly.
- Whisk together the eggs, coconut sugar, melted coconut oil, and vanilla extract in a large bowl until well combined.
- Pour the cooled chocolate into the wet ingredients and stir thoroughly. Add salt and cocoa powder, mixing until the batter is uniform and fudgy.
- Preheat your waffle iron and lightly spray with non-stick spray or brush with oil.
- Pour the batter into the waffle iron, spreading evenly. Cook for about 4-5 minutes until crispy on the outside and cooked through.
- Remove carefully and let cool slightly before serving. Top with your favorite toppings if desired.
Notes
- Ensure the chocolate is fully melted and cooled before mixing to prevent cooking the eggs.
- Use a non-stick or well-greased waffle iron for best results.
- For vegan versions, substitute eggs with flax or chia eggs and use vegan chocolate chips.
