  • Total Time: 20 minutes
  • Yield: 1 sandwich

Ingredients

Scale
  • 2 slices of hearty bread (sourdough or multigrain)
  • 2 large eggs
  • 4 slices of crispy bacon or breakfast sausage (optional)
  • 2 slices of your favorite cheese (cheddar, Swiss, or American)
  • 1 tablespoon butter or margarine
  • Salt and pepper to taste
  • Fresh herbs like chives or parsley (optional for garnish)

Instructions

  1. Start by scrambling the eggs in a non-stick skillet over medium heat, seasoning with salt and pepper. Cook until fluffy and set aside.
  2. If using bacon or sausage, cook until crispy, then drain and set aside.
  3. Butter one side of each bread slice generously.
  4. Place one bread slice buttered-side-down on a heated skillet. Layer your cheese, scrambled eggs, and optional bacon or sausage on top.
  5. Top with the second bread slice, buttered-side-up.
  6. Cook the sandwich over medium heat until golden brown on one side, about 3-4 minutes.
  7. Carefully flip and cook the other side until the cheese is melted and the bread is crispy. Press gently with a spatula for even toasting.

Notes

  • For extra flavor, add sliced tomatoes or sautéed spinach inside the sandwich.
  • Use whole grain bread for added fiber and nutrition.
  • Reheat in a skillet or oven to keep the crispy texture intact.
