Instructions
- Start by scrambling the eggs in a non-stick skillet over medium heat, seasoning with salt and pepper. Cook until fluffy and set aside.
- If using bacon or sausage, cook until crispy, then drain and set aside.
- Butter one side of each bread slice generously.
- Place one bread slice buttered-side-down on a heated skillet. Layer your cheese, scrambled eggs, and optional bacon or sausage on top.
- Top with the second bread slice, buttered-side-up.
- Cook the sandwich over medium heat until golden brown on one side, about 3-4 minutes.
- Carefully flip and cook the other side until the cheese is melted and the bread is crispy. Press gently with a spatula for even toasting.

- For extra flavor, add sliced tomatoes or sautéed spinach inside the sandwich.
