Ingredients
Scale
- 2 cups fresh strawberries, sliced
- 1 cup blueberries
- 1 cup raspberries
- 1/2 cup granola or crushed nuts for crunch
- 1/4 cup honey or maple syrup (optional, for extra sweetness)
- For the champagne vinaigrette:
- 1/4 cup extra virgin olive oil
- 2 tablespoons champagne vinegar
- 1 teaspoon honey
- Salt and freshly ground pepper to taste
Instructions
- Start by washing all the berries thoroughly. Slice the strawberries into thin, even pieces and combine all the berries in a large mixing bowl.
- In a small bowl, whisk together champagne vinegar, honey, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is well emulsified.
- Pour the vinaigrette over the fruit and gently toss to evenly coat.
- Sprinkle granola or crushed nuts over the top for added texture. Add coconut flakes or a drizzle of honey for extra sweetness if desired.
- Serve immediately in individual bowls or a large serving dish. Garnish with fresh mint leaves or extra berries for presentation.
Notes
- Use ripe, fresh berries for the best flavor and sweetness.
- Keep the champagne vinaigrette separate until serving to prevent sogginess.
- Customize with different crunchy toppings like toasted walnuts or sunflower seeds for variety.
