- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup apple cider
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix dry ingredients in a bowl. In another bowl, cream butter and sugar until fluffy.
- Add egg, vanilla, and cider to the wet mixture. Gradually mix in dry ingredients.
- Spoon batter onto prepared baking sheets, about 2 inches apart.
- Bake for 12-15 minutes or until edges are golden. Cool completely.
- Fill with cream filling and sandwich together. Serve and enjoy!
Notes
Ensure not to overmix batter to keep the cookies tender. Filling can be flavored with a hint of cinnamon for extra warmth.
