Instructions
- Preheat oven to 350°F (175°C). Grease a pie dish.
- In a mixing bowl, beat egg yolks with sugar until smooth. Add lemon juice, zest, vanilla, and melted butter, mix well.
- In a separate bowl, whip egg whites until stiff peaks form.
- Gently fold egg whites into the lemon mixture.
- Pour batter into the prepared pie dish and bake for 25-30 minutes until golden and set.
- Allow to cool completely, then glaze with a mixture of lemon juice and powdered sugar if desired.

- For a gluten-free version, substitute with almond flour.
